I had this soup at a Lebanese restaurant and searched for a long time to find it. It was worth every second!

Lemons are a good source of vitamin C. The citric acid helps prevent kidney stones and the pectin is a form of soluble fiber which is beneficial for digestion.

Garlic research shows that there are antiviral properties which helps your immune system. One of its best qualities is that it is available and easy to add to any dish.

Olive oil is loaded with antioxidants which gives it anti-inflammatory abilities.

Lebanese Chard Lentil Soup


  • 8 cups vegetable broth
  • 1 cup brown lentils
  • 1 bunch Swiss chard, thinly sliced.
  • 2 sweet potatoes, diced.
  • 1 cup lemon juice
  • 6 garlic cloves, minced.
  • 1 tablespoon salt
  • ½ cup olive oil


  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the brown lentils and cook for 10 minutes.
  3. Incorporate the Swiss chard stalks and cook for an additional 5 minutes.
  4. Add the diced sweet potatoes and cook for another 5 minutes.
  5. Stir in the thinly sliced Swiss chard leaves and cook for 1 minute.
  6. In a small bowl, mix together the lemon juice, minced garlic, and salt. Add this mixture to the soup and let it simmer for 5 minutes.
  7. Finally, add the olive oil to the soup and let it simmer for an additional 5 minutes.
  8. Serve hot and enjoy!
