White Bean Chili – Crockpot Style!

As the weather shifts to cold, I fall in love with my crockpot again. I really like how easy crockpot cooking can be. Another win is the awesome smell that permeates the entire house. I feel like the energy of good food cooking is clearing the space. It allows the energy of home to settle in.

Chili is one of my very favorites.  It reminds me of football games and tailgating. I adore the extras that come with it…  cheese, sour cream, onions, chips, etc. While this recipe can be cooked on the stove using canned beans, I choose to make it in a crockpot using dried beans. Some are under the impression that using dried beans means more work. Not true! And, the extra flavor is worth it. Please try it!!!


  • 1 lb. Great Northern beans, dried (2 cups of dried beans)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 8 oz mild green chiles, canned
  • 6 c vegetable broth
  • 2 T nutritional yeast
  • 2 t ground cumin
  • 1 ½ t dried oregano
  • ¼ t ground cloves
  • ½ t cayenne pepper
  • 1 ½ t salt
  • Dash black pepper


  1. Soak beans overnight
  2. Drain beans
  3. Place all ingredients into crockpot. Cook 8 hours on low.


It doesn’t get easier than this does it?
