Vegan No Bake Cookies

I made No Bake cookies this weekend. These cookies were the first thing I learned to cook by myself at 10 years of age. Do you remember that Quaker Oats had this recipe on the outside of their container?

 Sugar – Butter – Milk – Cocoa – Oats.

 I must have made this recipe hundreds of times. It checks all the boxes…. simple, easy, fast and very tasty!

Nowadays I cook and eat very differently.   May this updated version help you to make yummy noises!!!

Ingredients

  • 1/4 cup olive oil
  • 1/2 cup maple syrup
  • 1/4 almond milk (or any other plant-based milk)
  • 2 T cocoa powder
  • 1/4 cup plus 2 T crunchy peanut butter
  • 1 t vanilla
  • 1-1/2 cup whole rolled oats

Step 1

  • Line a large baking sheet with parchment paper
  • Measure out all the ingredients…..this recipe moves fast
  • In a medium saucepan, melt coconut oil.
  • Then add maple syrup. Then milk. Then cocoa. Then peanut butter. Then vanilla
  • Bring to boil for 2 minutes. Stir using a whisk.

Step 2

  • Remove from heat. Add oats. Stir well.

Step 3

  • Using a 1/8 c measuring cup drop cookies onto the baking sheet. 
  • Chill for 30 minutes.
  • Try not to eat them all in one sitting!!!!
