Secret ingredient

This week’s “new thing”…….Check out these insanely good Vegan Brownies! I topped them while warm with vanilla ice cream. Easy and super delicious!

The cherries are the secret ingredient……

Ingredients

  • 1 C pitted dates
  • ¾ C gluten free 1:1 baking flour
  • ½ C unsweetened cocoa powder
  • 1 t baking powder
  • 1 t cinnamon
  • ½ t salt
  • 1 15-oz black beans rinsed and drained
  • ¾ C mashed ripe banana
  • ½ C unsweetened applesauce
  • 1 T flaxseed meal
  • 2 t vanilla
  • ¾ C unsweetened dried cherries
  • ½ C sweetened coconut flakes

Instructions

  1. Preheat oven to 350 degrees.
  2. Line 9” square pan with parchment paper.
  3. Combine dates and ½ c of warm water. Let sit for at least 5 minutes.
  4. In a large mixing bowl add flour, cocoa, baking powder, cinnamon, and salt. Mix well using a whisk.
  5. In a food processor combine dates with soaking liquid, beans, banana, applesauce, flaxseed meal and vanilla. Process until smooth.
  6. Add bean mixture and dried cherries to flour mixture. Stir to combine.
  7. Spread batter in prepared pan. Sprinkle coconut on top.
  8. Bake 50-60 minutes or until the toothpick comes out clean.
  9. Cool on wire rack. Cut into 16 brownies.
