Cranberry and Chocolate Bliss

I love to experiment. I am always looking for a new recipe. I read this recipe and decided immediately that I wanted to add chocolate. Chocolate makes everything better.

These are high in protein. They are just sweet enough and easy to make.

Ingredients

  • 1 c pine Nuts
  • 1 c sunflower seeds
  • 1 c whole almonds
  • 2 c dried cranberries
  • 1/2 c coconut flakes
  • 1 t nutmeg
  • 2 t maple syrup
  • 1 t vanilla
  • 1 c chocolate chips

Instructions

  1. Pine nuts, sunflower seeds and almonds in a food processor. Coarsely grind
  2. Add cranberries. Pulse 3 to 4 times
  3. Add coconut and nutmeg. Pulse 3 to 4 times
  4. Add maple syrup and vanilla. Continue to pulse until the mixture begins to stick together
  5. Make Tablespoon sized balls. Place in freezer for 10 minutes
  6. While balls are in the freezer, melt chocolate chips in microwave.
  7. Partly dip each ball in chocolate
  8. Please do not eat all of them in one sitting!!!!
